St. George was an early Christian martyr who was the patron saint of England and of Georgia and is venerated as one of the 14 Auxiliary Saints (Holy Helpers).
Little of his life or deeds is known but it has been documented that he was a Roman soldier who was tortured and decapitated under Diocletian's persecution of Christians in 303. Many legends about him as a warrior saint became very popular and more extravagant over time. One such legend says that he rescued a Libyan king's daughter from a dragon and then slayed the monster in return for a promise by the King's subjects that he be baptised.
